2 x 8oz fish fillets (cod or pollack) skinned and flaked
12oz potatoes (cooked and mashed)
4 spring onions (finely chopped)
2 tsp freshly chopped parsley
4oz cheddar cheese or garlic & herb soft cheese
1 beaten egg
2 tbsp sunflower oil
Pre heat the grill.
Mix the fish flakes, potatoes, spring onions and parsley together in a large bowl.
Dust your hands well in flour and divide the mixture into 12 “burger” shaped portions. Place the cheese on top of 6 of the burgers, topping each one with another burger. Shape and mould the two into one burger.
Coat the fish in the beaten egg and dust into the breadcrumb mixture.
Cook under the grill at a moderate heat for 15 – 20 minutes, turning once and basting lightly.
Serve with warm pitta bread, a spicy relish and a crunchy mixed salad. Oh, and a glass of chilled Sav Blanc!
